Carnaroli is a variety of medium-grained rice cultivated in the Pavia, Novara, and Vercelli provinces of northern Italy. Known for its use in risotto, Carnaroli differs from the more commonly used Arborio rice by having a higher starch content, firmer texture, and longer grain. Thanks to its elevated amylose levels, Carnaroli rice holds its shape better during the slow cooking process essential for making risotto. It is the most popular rice in Italian cuisine and is highly valued for its superior qualities.
