Nuvola means ‘cloud’, a word connected with lightness and softness. An appropriate name, since that is the effect Nuvola will have on your bakes! It is to be used for leavening within 24 hours, allowing preparation of voluminous and alveolate doughs. This means you can create the unique consistency needed for bakes that melt in the mouth.
